Garden cress seeds are the small, oval, reddish-brown seeds of Lepidium sativum. In Morocco they are called Hab Rchad or Hab Errchad (حب الرشاد), in classical Arabic الثفاء (ath-thuffa’), in French cresson alénois or graines de cresson, and in India halim or aliv. Hab Rchad has a long place in Moroccan and wider Arab household tradition, and it is mentioned in classical prophetic-medicine writings. Grandmothers prepared it for women after childbirth and for nursing mothers, usually soaked in warm milk and sweetened with honey, and it was traditionally kept for after childbirth rather than taken during pregnancy. It was also traditionally given to help the body recover after a bone fracture, taken in winter against coughs and chills, and prepared as a strengthening drink for people who felt tired or weak. In beauty traditions, the soaked seeds were worked into hair masks and oils for the hair and scalp.

• 🥛 Soak a spoonful in warm milk or water until the seeds turn gel-like, then sweeten with honey.
• 🥗 Sprinkle the whole seeds over salads, soups or yoghurt for a gentle peppery crunch.

• 🌱 Sow them on damp cotton or soil to grow fresh cress sprouts in a few days.

🥣 Recipe: Hab Rchad with Milk and Honey

1. Put 1 tablespoon of garden cress seeds in a glass.
2. Pour over 1 glass of warm milk and stir.
3. Leave for about 1 hour, until the seeds swell and form a soft gel.
4. Stir in 1 teaspoon of honey and drink it warm or at room temperature.
