✨ Moroccan Dried Caper Buds — A Distinctive Pantry Ingredient
Moroccan dried caper buds are the unopened buds of the caper plant, from the Capparaceae family. They are known as caper buds, capers, kabar, kebbar, qbar and, in Arabic, كبار or القبار. The whole buds in this selection are dry, wrinkled and naturally varied in colour from olive green to deep brown. Their character is distinctive and pleasantly sharp, making them a useful ingredient when a dish calls for a concentrated caper note.
🌿 Traditional and Cultural Uses
Across Mediterranean and North African food traditions, caper buds were traditionally used to give savoury dishes a lively, assertive finish. In Moroccan kitchens, the name الكبار is familiar alongside fish preparations, salads and slow-cooked dishes where a small amount can change the balance of flavours. Their role is culinary: they were valued as a pantry ingredient that adds character rather than as an everyday herb.
🍵 How to Use
- 🍲 Add softened, chopped buds to a fish tagine or another savoury tagine near the end of cooking.
- 🥗 Fold a small amount into a salad, potato dish or vegetable preparation for a more pronounced caper flavour.
- 🐟 Use with fish, olives, lemon and herbs in Mediterranean-style cooking.
- 🥄 Chop finely before stirring into a sauce, dressing or cooked filling.
🥣 Simple Tagine Preparation
- Rinse the dried caper buds, then soak them in clean water until they have softened.
- Drain and chop them if a finer texture is preferred.
- Add them to a nearly cooked fish or vegetable tagine with lemon, olives and herbs.
- Taste before adding more salt, then serve the tagine hot with bread or couscous.
