Whole Nutmeg

✨ Whole Nutmeg — A Warmly Fragrant Kitchen Spice

Nutmeg is the aromatic kernel of the nutmeg tree, known in English as nutmeg or nutmeg seed, in French as noix de muscade, and in Arabic as جوزة الطيب. In Moroccan Darija, many cooks also call it gouzat tib or el kouza. Each whole kernel is brown and oval with a naturally wrinkled surface; when freshly grated, it releases a warm, sweet, woody aroma that is fuller than pre-ground spice.

🌿 Traditional and Cultural Uses

Across Moroccan, Arab and wider Mediterranean home cooking, nutmeg was traditionally kept among the fragrant spices for sweet dishes, savoury recipes and warming drinks. It was used in small amounts to give a round, comforting aroma to family cooking, especially where milk, eggs, rice or rich sauces are part of the recipe.

🍵 How to Use

• 🥣 Grate a little over béchamel, gratins, mashed potato or creamy soups.
• 🍰 Add a small amount to cakes, custards, biscuits and other baked sweets.
• ☕ Stir a light grating into milk, coffee or a warm spiced drink.
• 🍲 Use sparingly in rice dishes, stuffing and savoury spice blends.

🥣 Simple Béchamel Preparation

1. Melt butter in a small pan, stir in flour, then gradually whisk in milk.
2. Cook while stirring until the sauce is smooth and lightly thickened.
3. Season with salt and pepper, then grate a little whole nutmeg directly into the sauce.
4. Serve with pasta, vegetables or a baked gratin.
