✨ Natural Mace — Warm, Floral Kitchen Spice
Natural mace is the delicate, lacy dried aril that surrounds the nutmeg seed. It is known as mace, nutmeg rind, nutmeg aril and, in Morocco, بسيبيسة (Bssibissa) or غلاف جوز الطيب. Mace is not the hard nutmeg seed itself: it is the fine golden-orange layer around it. The whole blades in this pack are light, curled and aromatic, with a warm perfume that is gentler and more floral than nutmeg.
🌿 Traditional and Cultural Uses
In Maghrebi and Arab home kitchens, mace was traditionally used to give a fragrant warmth to family dishes, sweet pastries, slow-cooked sauces and home-made spice blends. A small blade was also added to warm milk or aromatic kitchen infusions after meals for its distinctive perfume and rounded flavour. Its delicate appearance makes it a spice to use with a light hand: one blade can scent a whole pot without taking over the other ingredients.
🍵 How to Use
- ✨ Add one whole blade to milk tea, warm milk or a spiced hot drink, then strain before serving.
- 🍚 Lightly crush a blade and stir it into rice, couscous, a creamy sauce or a slow-cooked savoury dish.
- 🥮 Use a small amount in pastry, custard, biscuits and other sweet recipes that welcome a warm spice note.
- 🌿 Combine it with cinnamon, cloves or cardamom when preparing your own aromatic spice blend.
🥣 Simple Spiced Milk
- Warm 250 ml of milk with one whole blade of mace and a small piece of cinnamon.
- Keep it on low heat for a few minutes so the spices perfume the milk.
- Remove the spices, strain if needed, and sweeten to taste before serving.
