✨ Rock Sugar Candy — Sukkar Nabat, the Crystal Sweet of Our Grandmothers
Rock sugar candy is known in Arabic as سكر النبات (Sukkar Nabat) and in Moroccan Darija as سكر القنديل (Sokar l’Qandil) or simply nbat. In French it is sucre candi, in English also rock candy, crystal sugar or candy sugar, and in India it is called mishri. The English word “candy” itself comes, through French, from the Arabic قندي (qandi), meaning crystallised sugar. It is made by letting a rich sugar syrup crystallise slowly, and it forms clear to milky-white chunks with flat, glassy faces, like small pieces of ice. The pieces are hard, melt slowly on the tongue and have a clean, gentle sweetness with no other flavour.
🌿 Traditional and Cultural Uses
In Moroccan and Arab homes, sukkar nabat was always kept in the kitchen cupboard as a household remedy. Grandmothers dissolved a piece in warm water, or in an infusion of thyme or anise, to soothe coughs and a sore throat, and children were given a small piece to suck when they had a cold. It was traditionally served with tea and sweets to welcome guests, and sugar has long been a sign of sweetness and good wishes at family occasions. Further east, the same crystals hold a special place too: in Iran, saffron nabat was stirred into hot tea for comfort; in India, mishri was chewed with fennel seeds after meals to freshen the breath and settle the stomach; and in northern Germany, a large crystal is placed in the cup before black tea is poured over it.
