✨ Moroccan Saffron — The Red Gold of the Moroccan Kitchen

Saffron is the dried stigma of the saffron crocus, Crocus sativus. Each purple flower carries only three fine red threads, picked by hand at dawn during a short autumn harvest and then gently dried, which is why saffron has long been called “red gold”. In Morocco it is known as الزعفران, zaafran or za3fran in Darija, and the real threads are called الزعفران الحر (zaafran el hor), “pure saffron”, to set them apart from coloured substitutes. In French it is safran.

Our threads are deep crimson with some lighter yellow ends, dry and springy to the touch, with a warm, honeyed, slightly floral scent. Soaked in warm water they slowly release a bright golden colour.

🌿 Traditional and Cultural Uses

Saffron has a place of honour in Moroccan family cooking. It was traditionally reserved for weddings, Eid and the dishes served to guests: chicken tagine with preserved lemon and olives, mrouzia, pastilla, couscous with tfaya and the harira of Ramadan evenings.

In Arab and Persian folk medicine saffron was traditionally taken in warm drinks to lift the spirits, to aid digestion after heavy meals and to ease monthly discomfort. Grandmothers mixed a few soaked threads with milk or honey for face masks prepared before a wedding, and in Moroccan tradition saffron water was used as an ink for writing blessings.

🍵 How to Use

  • 🍲 Tagines, stews, couscous, rice and soups such as harira
  • 🍰 Desserts, milk puddings, cakes and pastries
  • ☕ Saffron tea, or a few threads added to a pot of mint tea
  • 🥛 Warm saffron milk with honey

Saffron is used by the pinch: 10 to 15 threads are enough to colour and perfume a dish for four.

🥣 Recipe: Saffron Infusion for Cooking

  1. Crumble 10 to 15 threads between your fingers into a small bowl.
  2. Pour over 2 to 3 tablespoons of warm, not boiling, water or milk.
  3. Leave to steep for 15 to 20 minutes, until the liquid turns deep gold.
  4. Add the liquid and the threads to your tagine, rice or dessert towards the end of cooking.
