✨ Moroccan Natural Hulled Sunflower Seeds — The Kernel Without the Shell
These are the kernels of the sunflower, Helianthus annuus, with the striped black-and-white shell already removed. In English they are also called sunflower kernels, shelled sunflower seeds or sunflower hearts; in French, graines de tournesol décortiquées. In Arabic they are بذور دوار الشمس or بذور عباد الشمس, and in Levantine Arabic لب عباد الشمس. In Morocco the family of snack seeds is known simply as الزريعة (zriaa), and these shelled kernels as زريعة مقشرة. Each kernel is slim and pointed, pale grey to ivory in colour, with a soft crunch and a mild, nutty taste.
🌿 Traditional and Cultural Uses
The sunflower was first cultivated by the Indigenous peoples of North America, who ground the seeds into meal for flat cakes and porridge and pressed them for oil. The plant later travelled to Europe and on to Russia and Eastern Europe, where cracking sunflower seeds became a beloved everyday habit. In Morocco, zriaa has long been part of social life: seeds shared among friends on an evening walk, at family gatherings, during Ramadan nights after ftour and in the stands at football matches. In folk tradition a handful of seeds was given as a simple, nourishing snack to keep going through a long day of work or study. The flower itself, which turns its face towards the sun, has been admired in many cultures as a symbol of warmth, loyalty and good fortune.

🍳 Recipe: Pan-Toasted Sunflower Seeds
- Heat a dry frying pan over medium heat, with no oil.
- Add a thin layer of hulled sunflower seeds.
- Stir constantly for 3 to 5 minutes, until the kernels turn light golden and smell nutty.
- Tip onto a plate straight away so they stop cooking, and add a pinch of salt or cumin if you like.
- Let them cool completely, then enjoy them or keep them in a closed jar.

Loose hulled sunflower kernels, available in 100g, 250g, 500g, 1kg, 2kg, 3kg and 5kg. Choose a small pouch for everyday snacking or a larger weight for baking and family use.
🌤️ Storage
Keep the seeds in a tightly closed pouch or jar in a cool, dry place away from heat and direct sunlight. Because shelled kernels are rich in natural oil, they keep their fresh taste longest when well sealed, and in hot weather they can be kept in the fridge. Stored well, they stay good for several months.
