✨ Moroccan Spiced Coffee — A Warm Cup Full of Aroma

Moroccan spiced coffee is roasted coffee ground together with whole spices, so every cup carries their warmth. In Morocco it is called قهوة معطرة (qahwa m’attra), قهوة بالعطرية (qahwa bel ‘atriya) or simply قهوة بالتوابل; in French it is café épicé or café marocain aux épices. The blend is dark and rich, with the sweet scent of cinnamon, the fresh lift of cardamom, a gentle peppery warmth and a hint of citrus from dried orange peel.

🌿 Traditional and Cultural Uses

In Moroccan homes spiced coffee is a cup of hospitality. It was traditionally served to guests with msemen, baghrir or sfenj, poured after the family couscous on Friday, and prepared on cold winter mornings in the mountains and the countryside. During Ramadan many families drank it after ftour. Grandmothers valued its spices for warming the body and settling the stomach after a heavy meal, and cardamom and cinnamon have long been added to coffee in Arab and North African kitchens to make it more fragrant.

🍵 How to Use

  • ☕ Brewed in a small pot on the stove, the traditional way
  • 🥛 With hot milk as a nss-nss, half coffee and half milk
  • 🫖 In a moka pot or a filter coffee machine
  • 🍯 Sweetened with sugar or honey, or taken plain

🥣 Recipe: Stovetop Spiced Coffee

  1. Bring about 150 ml of water per cup to the boil in a small pot.
  2. Add one heaped tablespoon of spiced coffee per cup and stir.
  3. Lower the heat and let it simmer gently for two to three minutes without letting it boil over.
  4. Take the pot off the heat and leave it for a minute so the grounds settle.
  5. Pour slowly into cups or through a fine strainer, add sugar or hot milk if you like, and serve.
