✨ Moroccan Organic Psyllium Seeds — The Little Seed That Turns to Gel
Psyllium seeds are the tiny, boat-shaped seeds of a plantain plant, pale pinkish-beige with a smooth, glossy coat. In Morocco they are called القاطونة (qatouna) and, in Darija, zriât lqatouna (زريعة القاطونة). Classical Arabic herbal books name them بزر قطونا (bizr qatuna); in India and Persia they are known as isabgol or ispaghula, and in French as graines de psyllium or psyllium blond. The pale seeds shown here are the blond psyllium type, Plantago ovata. They have almost no smell and a neutral taste, and they are prized as a natural source of soluble fibre. Their special character shows in liquid: the thin coat releases a soft, clear mucilage, and within minutes a spoonful of seeds becomes a gentle gel.
🌿 Traditional and Cultural Uses
In Moroccan homes and in the wider Arab herbal tradition, qatouna had a familiar place on the attar’s shelf. Grandmothers soaked a spoonful in water or milk and served it as a cooling drink in the hot months, and it was traditionally taken to ease digestion and keep the bowels regular. In Unani and Ayurvedic tradition, isabgol was given in the same soaked form for the stomach. The soft gel was also traditionally applied to the skin as a soothing compress, and women used it to set and define their hair.
🥣 How to Use
- 🥤 Soak the seeds in water, milk or juice until they turn to gel, then drink.
- 🍓 Stir a spoonful into smoothies, yoghurt or overnight oats for a thicker texture.
- 🍞 Grind the seeds and add them to bread or gluten-free dough as a natural binder.
- 🍲 Use the gel to give body to soups, sauces and puddings.
- 💇 Simmer the seeds in water and strain them to make a light homemade hair gel.
🥛 Traditional Qatouna Drink
- Put 1 teaspoon of psyllium seeds in a large glass.
- Pour over about 250 ml of water, milk or fresh juice.
- Stir well and leave for 10 to 15 minutes, stirring once more, until a soft gel forms around the seeds.
- Sweeten with a little honey if you like, stir again and drink straight away.

⚠️ Usage Note
Psyllium seeds swell a lot in liquid, so always soak them first or take them with a full glass of water.
🌤️ Storage
Keep the seeds in a tightly closed jar or pouch in a cool, dry place away from humidity and direct sunlight. Always use a dry spoon, since a drop of water starts the gel. Stored this way, they keep well for up to a year.
