Green cardamom is the aromatic pod of Elettaria cardamomum, known in Morocco as hab el hil and qa’qla (حب الهيل، قعقلة), and in Arabic more broadly as hēl or habahan (هيل، حبهان). In French it is cardamome verte; it is also called elaichi in South Asian kitchens. Each small green pod holds dark, fragrant seeds with a fresh, warm scent that is lightly citrusy and sweet-spiced. Across Moroccan, Arab and South Asian kitchens, cardamom has long been valued as a hospitality spice. It was traditionally added to coffee and tea for its perfume, and to festive sweets and rice dishes for its warm flavour. After rich meals, it was traditionally used in drinks and chewed in small amounts to freshen the mouth. Its unmistakable aroma makes it a familiar spice for welcoming guests around a shared pot of coffee or tea.

🍵 How to Use

• ☕ Lightly crush whole pods and add them to coffee or tea while it brews.
• 🍚 Add a few pods to rice, couscous or a savoury sauce, then remove the pods before serving.
• 🍰 Grind the seeds from inside the pods for cakes, biscuits, milk desserts and sweet pastries.
• 🥛 Simmer gently with milk for a warmly spiced drink.

🥣 Simple Cardamom Coffee

1. Lightly crush 2 or 3 green cardamom pods to release their aroma.
2. Add them to about 2 cups of coffee as it brews.
3. Let the coffee rest briefly, strain if needed, and serve warm.
