✨ Moroccan Natural Thyme — The Warm Herb of the Moroccan Kitchen
Thyme is one of the most familiar herbs in a Moroccan home. In Arabic and Darija it is called الزعتر (zaatar, also written za’atar or zaater), in French thym, and in Tashelhit Amazigh it is known as azukni. Botanically it belongs to the genus Thymus in the mint family. Our Moroccan thyme is dried and crumbled: small grey-green, needle-like leaves mixed with fine pieces of woody stem, with a few brownish flecks where the leaves dried naturally. Rub a pinch between your fingers and it releases a warm, peppery, slightly camphor-like scent that fills the kitchen.
🌿 Traditional and Cultural Uses
Across Morocco and the wider Arab world, thyme has been part of daily life for generations. In winter, grandmothers brewed a hot glass of zaatar with honey when someone in the family had a cold or a cough, and it was traditionally served after heavy meals to settle the stomach. Many families added a pinch of zaatar to their mint tea during the cold months. In folk practice it was also used for steam baths over a bowl of hot water, and a cooled thyme infusion was traditionally used as a rinse for the hair and scalp. In the kitchen it has always been a staple: breakfast bread dipped in olive oil and zaatar is a taste of home for many Moroccans.
